I will never forget being mesmerized by my Filipino Aunt’s plantain cookies she would make for me and my cousin. “A PLANTAIN in a COOKIE?! How did you come up with such a wonderful idea?” When you are a kid and an adult presents something new that you’ve never seen or heard of it often feels like magic. That is the same feeling that I get today when I play in the kitchen. Cooking isn’t a chore, something relegated to 15 minutes a day; it is an adventure and an opportunity to serve others.
