Sweet and Spicy Kung Pao Chicken
This dish infuses flavors from traditional Chinese and Mexican cuisine. The garlic, ginger, and chili flavors create a spicy kung pao sauce derived from the Chinese cuisine. Then, the dish is topped with a fruity pico de gallo. Serve atop brown or steamed white rice. Pico de gallo salsa
Kung Pao sauce
  1. Make the pico de gallo salsa by combining the ingredients in a large mixing bowl and sit it in the refrigerator to keep cool and let the juices marinate.
  2. Combine the Kung Pao ingredients in a sauce pan and stir on medium heat for 15 minutes. If chicken is not done, reduce the heat to a simmer.
  3. Combine ingredients for the chicken in a large mixing bowl and stir well. Dip chicken in the bowl, covering well. Then put the chicken in a sauce pan on medium until nice and tender, about 15 minutes.
  4. When the chicken is done, pour the kung pao sauce on top of each serving and top with pico de gallo. Garnish with extra cilantro and lime juice if desired.
