My favorite thing about summer is spending time at the pool. Each time I go, it brings back memories of when I first began swimming in floaties. Once I got older and learned how to swim better, it became more of a fear of the deep end of the pool! It’s fun to reminisce about the Summers gone by, but one downside that hasn’t changed – it often leaves you hot and thirsty. There’s nothing better on a hot summer day than a Watermelon Raspberry Granita to solve your poolside problems. Granita is a refreshing, lightly sweetened Italian slushie. You could make this using any two fruits, fruit juices, or a fruit and herb that pair well together.
For this recipe, I’m using the quintessential summer fruit, the watermelon!
Watermelon Raspberry Granita
Prep time: 15 minutes
Freeze time: 4 hours
Ingredients:1 pint raspberries ½ c sugar ¼ c cubed seedless watermelon
Combine the raspberries, sugar and ¼ water in a saucepan and bring to a simmer over medium heat. Stir it occasionally for 6 minutes, or until the raspberries have dissolved and a syrup has formed.
Press the raspberry through a fine-mesh sieve and put the remaining liquid in the blender.
Add the syrup to the watermelon and puree until a blended.
Pour the liquid in a freezer safe dish.
Freeze for 45 minutes, then check and scrap the ice crystals to prevent too much hardening.
Repeat every 45 minutes until you’ve reached 4 hours.
